		<description>I ate this dish all my life but never made one myself.  The crispy noodles sound challenging and I do not think I have the right wok or pan for it.  I followed your method and I did it.  I run out of time to make the blanched noodles drier.  I put them in a collandar and used a paper towel to absorb as much water as possible.  Then I tossed them with my fingers over and over in front of a fan to expedite the process.    It turned out so good.  I will make it again.  Thanks for sharing your recipe.</description>
